Italian Tortellini Soup

It’s soup season!  I love the cozy feeling of a big bowl of soup on a cold night.  This soup is so very easy to make.  It’s filling and satisfying and EASY.  It doesn’t have a ton of ingredients and you can put this together in just a few minutes.  Perfect for a warm homemade meal on a busy weeknight.   You should make this and gather around your table with your people and enjoy!

You’ll need:  Italian sausage, a bag of frozen tortellini, a can of diced tomatoes, chicken (or vegetable) broth, garlic, fresh or frozen spinach, basil, garlic salt, and parmesan cheese.

Start by cooking the sausage and garlic together in your soup pot.  Break up the sausage as it cooks.  Cook it on medium so that you are cooking the sausage through, but not burning it.  I used hot Italian sausage because I love the spice – but you can use mild or even sweet if you prefer.  When the sausage is fully cooked, drain the grease.

 

 

 

 

 

 

Now stir in the broth, water and diced tomatoes and bring to a boil.

 

 

 

 

 

 

Once it’s boiling, add the tortellini and boil for 5-6 minutes.

 

 

 

 

 

 

Reduce the heat to low and add the spinach, basil, garlic salt and pepper.  I used frozen spinach this time.  See the printable recipe below for measurements.

 

 

 

 

 

 

 

Let it simmer for about ten minutes and it’s ready to serve!

  1. 9-10 oz Italian sausage
  2. 3-4 cloves minced garlic
  3. 28 oz chicken or vegetable broth
  4. 1 1/2 c water
  5. 1 14.5 oz can diced tomatoes
  6. 9 oz package frozen tortellini
  7. 1 cup fresh spinach (or about a half of a bag of frozen spinach)
  8. 1 t dried basil
  9. 1 t garlic salt
  10. black pepper to taste
  11. Parmesan cheese for topping
