I mean, what about the name of this recipe doesn’t sound amazing? Let’s just put all these good things into bread. You can serve this with a soup or chili, or just eat it by itself.
You will need: bacon, flour, baking powder, salt, sugar, a jalapeno, shredded cheddar, buttermilk, oil and cream cheese.
Preheat the oven to 350. Spray a 9×5 inch loaf pan with cooking spray. The first thing you want to do is cook the bacon. You need about a cup of crumbled bacon – it’s about 8-10 slices. Next, chop the jalapeno – seeds and all.
Combine the bacon, jalapeno, cream cheese and cheddar cheese in a large bowl and stir it thoroughly. See printable recipe below for measurements.
In a separate bowl, whisk together the flour, sugar, salt and baking powder.
Add cream cheese mixture, buttermilk and oil to flour mixture and stir just until combined. Don’t over mix. It’s all going to combine and bake together beautifully.
Now put the mixture into the loaf pan. It will be pretty thick, so you might have to use your hands (with a little flour on them) to push it down into the pan.
Bake for 50-60 minutes. The loaf should be golden brown and a toothpick inserted should come out dry. Remove from the oven and place it on a wire rack for about 5 minutes before taking it out of the pan. Once you take it out of the pan, leave it on the wire rack to cool. You can (and should) eat it warm. It also reheats nicely in the oven, toaster or microwave.
This, for me, is the stuff that dreams are made of. There will be little pockets of cream cheese with all these big bold flavors baked into a bread. What more could you want?
Bacon Jalapeno Cheesy Bread
Ingredients
- 1 cup of bacon, cooked and crumbled (8-10 slices)
- 3 c all-purpose flour
- 1 T baking powder
- 2 T sugar
- 1 t salt
- 8 oz cream cheese, softened
- 1 jalapeno, chopped (used seeds as well unless you don't want any heat)
- 2 c shredded cheddar cheese
- 12 oz buttermilk
- 1 T vegetable or canola oil
Instructions
Preheat oven to 350.
Spray a 9x5 inch loaf pan.
Cook bacon, drain and crumble.
Chop jalapeno.
Combine bacon, cream cheese, jalapeno and cheddar. Mix thoroughly.
In another bowl, whisk together the flour, sugar, salt and baking powder.
Add cream cheese mixture, buttermilk and oil to flour mixture. Stir to combine, but don't over mix.
Place in the baking pan. If need be, use your hands to push the dough down as it will be thick.
Bake for 50-60 minutes. It should be golden brown and a toothpick inserted should come out clean.
Cool on a wire rack (in the loaf pan) for 5 minutes.
Slice and serve warm or cooled. You can also reheat it in the oven, toaster or microwave.
