Cajun Rice Bake

I made another of Delish’s one pan meals this week – cajun rice bake – and it is a keeper!  I have to say that I added a little spice at the end because when I think cajun, I think spice, and I thought this dish needed some fresh heat.  My family really enjoyed this dish and the one pan convenience is pretty great too!

You will need:  Extra virgin olive oil, an onion, one red and one green bell pepper, garlic, 2 andouille sausage cut into 1″ pieces, 2 large chicken breasts cut into 1″ pieces, one 15 oz can tomato sauce, 2 cups chicken stock, 1 c shredded cheddar cheese, cajun seasoning, 1 1/4 c long grain rice, and green onions.

Heat oven to 375.  Go ahead and chop your onions and peppers.  Slice the sausage and cut the chicken into cubes.  Heat the olive oil on the stovetop in a large ovenproof skillet.

 

 

 

 

 

 

 

 

Add the onions and peppers and saute until they begin to soften.  Add the sausage and cook until browned all over.  Add garlic and stir until fragrant.

 

 

 

 

 

Add chicken and cajun seasoning.  Salt and pepper to taste.  Cook, stirring often until chicken is cooked through.

 

 

 

 

 

 

 

 

 

 

Stir in the broth, tomato sauce and rice and cheddar.  

 

 

 

 

 

 

 

 

Bring to a simmer.  It will look like this. 

 

 

 

 

 

Transfer to the preheated oven and bake for 30-35 minutes or until the liquid is mostly absorbed into the rice.  When you take it out of the oven, top with green onions.  

 

 

 

 

 

 

Here’s where I added some extra spice.  I chopped a fresh jalapeno and added it and some red pepper flakes and stirred it in.  Here’s the delicious result!

Ingredients

  • 1 T olive oil
  • 1 medium onion, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 2 andouille sausages, cut into 1" pieces
  • 2 chicken breasts, cut into cubes
  • 2 cloves minced garlic
  • 1 can (15 oz) tomato sauce
  • 2 cups chicken broth
  • 1 c shredded cheddar cheese
  • 1 t cajun seasoning
  • 1 1/4 c long grain rice
  • sliced green onions
  • salt and pepper

Instructions

Preheat oven to 375.

Chop onions, peppers and meats.

Top with sliced green onions.

Optional: Also add a fresh chopped jalapeno and red pepper flakes for extra spice.
