Happy first day of summer! Tis the season for cookouts, picnics and pool parties. I love this pasta salad because it is simple to put together and works well for summer outings. It’s good cold or room temperature and it just looks pretty. You can add pretty much anything you want to make it your own.
You’ll need a 16 oz bag of frozen tortellini. Cook it according to directions and drain.
When it has cooled a bit, just dump it into a bowl and start adding all the good stuff. Here’s what I added: sliced black olives, baby pepperoni, sliced baby carrots, banana peppers, and about a cup of shredded parmesan cheese.
Other things you could add: cherry tomatoes, chopped red or green peppers, feta cheese, jalapenos, chopped broccoli or cauliflower,etc. Really, just add anything you want to throw in there!
The last step is to add Italian dressing
This is the kind I use. I just add about 1/2-3/4 of a cup and then just mix it all together. Keep it refrigerated and just give it a quick stir and a splash more dressing if it seems dry before you serve it.

Tortellini Pasta Salad
Ingredients
- 16 oz frozen tortellini
- 1/2-3/4 c Italian salad dressing
- 1 c shredded parmesan cheese
- 1 small can sliced black olives
- 1 c mini pepperoni
- baby carrots, sliced
- sliced banana peppers
Instructions
Cook tortellini according to package directions. Drain.
After it cools a little, add all other ingredients.
Mix well. Refrigerate until ready to serve.
Add more dressing if it seems dry.
