This healthy summertime veggie dip is flavorful, easy to put together, and perfect for any gathering!
I hope you are enjoying summer! Here’s a great recipe that is good all year round, but to me, it’s especially good in the summertime. It’s light and healthy and full of flavor. I’ve seen lots of variations on this recipe and I’ve heard it called lots of different things as well. Some people use black eyed peas instead of black beans. In my opinion, you could also use chick peas. It is sometimes called “texas caviar”. I’ve just always called it “summertime dip”, because that’s what it seems like in my head. I thought I’d share my version of this super simple recipe.
For my version, you’ll need a can of black beans, a can of corn, a can of rotel, green onions, green and red bell peppers, jalapeno, fresh cilantro and a bottle of Zesty Italian dressing.
You aren’t going to believe how easy this is. First, drain and rinse the black beans and corn. Next, chop up the peppers, onions and cilantro.


Then throw it all into a bowl, along with the can of Rotel. If there are other things you would like to add to it – go for it! I think it would be perfect with some diced avocado. You can also add orange, yellow or red bell peppers. A little lime juice would also add extra flavor.

Now add the Italian dressing. I usually add between 1/2-3/4 of a cup. Stir it all up and then put it in the fridge for a couple of hours to let all the flavors blend together.
Serve with tortilla chips. I think Tostitos scoops are the perfect chip for this. You could also use Fritos scoops. This is a great dish to take to a cookout or a picnic!

Summertime Dip
Ingredients
- 1 can black beans
- 1 can whole kernel corn
- 1 can Rotel
- fresh cilantro
- 1/2 chopped green bell pepper
- 1/2 chopped red bell pepper
- chopped green onions
- Italian salad dressing
- Tortilla chips for serving
Instructions
Drain and rinse the beans. Drain the corn.
Chop the peppers and onions.
Mix all the ingredients into a bowl and add 1/2-3/4 cup of Italian dressing.
Stir and place in the refrigerator for a couple of hours before serving.
Serve with tortilla chips.
