This cranberry orange bread tastes like Christmas. I’ve already made it twice this season, and will probably make it a few more. It just looks and tastes so festive to me. This would be great to make as gifts, to serve at a holiday brunch, or to take to a party!
You’ll need: fresh cranberries, an orange, flour, sugar, baking powder, salt, buttermilk, eggs, vegetable or canola oil, vanilla extract and confectioner’s sugar.
Preheat oven to 350 and lightly spray a loaf pan with non-stick spray (I use Baker’s Joy) and set aside.
In a large bowl, whisk together 1 1/2 c all purpose flour,1 t baking powder and 1/2 t salt. In a small bowl, combine 1 c sugar and the zest of a large orange. Rub the sugar and orange zest together with your fingers. I know – that seems weird – but it releases the oils in the orange zest and gives the bread a ton more flavor. Whisk the sugar mixture into the flour mixture and set aside.
In a separate bowl, combine 3/4 c buttermilk, 1/2 c canola or vegetable oil, 2 eggs, 1 T freshly squeezed orange juice, and 1/2 t vanilla extract. Add the wet ingredients to the dry and stir just until combined. Coarsely chop about a cup of fresh cranberries. You can do this with just a knife or use a small food processor. Fold the cranberries into the batter and spoon into the prepared loaf pan.
Bake for about 70 minutes or until a toothpick inserted in the middle comes out clean.
While the bread is still slightly warm, make a glaze to drizzle on top. All you do is whisk together 1 1/2 T fresh orange juice, a cup of confectioner’s sugar, and about a teaspoon of orange zest. Drizzle on top of the bread.

- 1 1/2 c all purpose flour
- 1 t baking powder
- 1/2 t salt
- 1 c sugar
- Zest of one large orange

- 1 c coarsely chopped cranberries
- For glaze:
- 1 c confectioner's sugar
- 2 T fresh orange juice
- 1 t orange zest

Combine the flour and sugar mixtures.
In separate bowl, combine, orange juice, eggs, buttermilk, oil and vanilla.
Add wet ingredients to dry and stir just until combined.
Fold in chopped cranberries.
Bake at 350 for about 70 minutes or until toothpick inserted comes out clean.
Make glaze by whisking together orange juice, zest and confectioner's sugar.
Drizzle glaze over warm bread.
