This crockpot spinach artichoke dip is ridiculously easy to make and perfect to take to parties! You literally just put it all in your crockpot on low, give it an occasional stir, then when it’s all melted and mixed, serve it with bread or tortilla chips. It’s so wonderful. Also, this makes quite a lot and will go far if you’re feeding a crowd.
I love a good party. Because I love a good party, I try to keep things on hand to make certain recipes that are great for entertaining. Although this isn’t a “quick” recipe, it’s something you can prep in advance. It really is simple to put together and is a crowd favorite.
You’ll need: 8 oz cream cheese, softened, 16 oz light sour cream, 1 stick butter, 10 oz frozen, chopped spinach, 1 can artichoke hearts, chopped, 4 oz can green chiles, drained, 1 1/2 c shredded parmesan cheese, 1/4 c grated romano cheese, and 1 T chopped garlic.
Put the cream cheese and butter in your crockpot. Drain and chop the artichokes. Thaw and drain the liquid from the spinach. Add the artichokes and spinach to the crockpot.

You can chop or mince the garlic, but make sure you have a full tablespoon because it adds tons of flavor. Next, toss in the can of green chiles. Finally, add the cheeses. It will take a couple of hours to fully melt. Just stir it occasionally and let it all blend together. It’s absolutely fine to leave it on low or warm for quite awhile. Or if you’d rather not serve it straight from your crockpot, just put it in a dish that you could microwave for a bit if you want to reheat it. You can definitely serve it at room temperature as well – it’s just whatever your preference is!

Serve with small pieces of bread or tortilla chips!
