Some friends of mine are on a Daniel fast right now, so I decided to try to come up with a good recipe that would be helpful for them. In case you don’t know, a Daniel fast means that you only eat fruits, vegetables, whole grains, nuts, seeds, oils and spices. To give credit where it is due, I have to say that I had some serious help in the test kitchen with the dressing. My daughters, Ashleigh and Kathryn, and my niece, Elise, helped me figure it all out and I think you will like the result.
Cook the quinoa according to the directions on the package. The amount of quinoa you make just depends on how many servings you want. I was trying to figure out what all would make this be a Thai flavor, so here’s what I used. I chopped up red peppers, green onions, red onion, cilantro, and broccoli. I also chopped some peanuts. You can omit any of the vegetables I used or add anything else that sounds good to you!
Lastly, I julienne sliced some carrots. I have this tool to get the cool looking julienne slice pretty easily. Click here if you want more information on this handy dandy tool!
The dressing was the juice and zest of a half of a lime, 2 T sesame oil, a splash of sweet chili oil, a clove of minced garlic, fresh grated ginger (to taste), but I used about a half of a teaspoon. You can use ground ginger if you want – or leave it out if you want. Next, I added two teaspoons of soy sauce and 2 teaspoons of orange juice for sweetness. I think rice wine vinegar might be great in this too, but I didn’t have any, so I didn’t use it. I might try adding that next time.
Assemble your bowl however you want! In fact, it would be fun to make this, set it up “taco bar” style, and let everyone assemble their own! Drizzle as much or little dressing as you want. This ended up tasting really good! I also added some sriracha on top of mine, because sriracha is delicious.
