Getting ready for Italy!

 

Daniel and I are going to Italy!  For a lot of years, we have been saying “some day we will get to go to Italy”, and now it’s finally here!  In October, we will be going on a twelve day trip to Rome, Florence, Assisi, Lucca, and more.  We’ve been meticulously planning so that we can make the most of our time.  The Rick Steves Italy 2016 book has become my constant companion.  We will be seeing family, visiting lots of famous sites, and eating amazing food.  We are also extremely excited that we will be taking a cooking class in Lucca!  I can’t wait to share whatever I learn there with you.  I plan to blog about the things we see and the foods we eat.  I hope you’ll follow along!

I also want to share a quick recipe with you today for a delicious marinade that I use a lot.  It’s called Tuscan Marinade.  My brother in law found this recipe a couple of years ago when he and my husband were making a mother’s day meal.  It is so good.  Just put all the ingredients in a large ziploc and let it sit in your fridge overnight.  It can be less time if you’re in a rush, but the longer it sits, the better.  We use it for chicken, but I think it would be good for beef as well, or even veggies.

Tuscan Marinade

This is enough marinade for about eight chicken breasts

2 cloves garlic, minced

2 T sage

1 T rosemary (or if you’re using fresh rosemary, one large sprig)

1/2 t crushed red pepper

1 t salt

1/2 t pepper

1/2 c extra virgin olive oil

Juice of 1/2 of a lemon

Coming soon will be recipes for chicken piccata, Penne all’Arrabbiata, Arancini, potato soup, apple crisp, homemade rolls, holiday cookies and more!  I am very excited about this time of year and all the foods that my family and I associate with this time of year.
