These rich and decadent triple chocolate muffins will satisfy all your chocolate cravings. You will want them for breakfast and beyond!
Once upon a time, I did a lot of baking for a coffee shop. This muffin recipe was one of the most popular things I baked. They’re not overly sweet, which seems contradictory, but they do have that rich dark chocolate flavor that I crave. So if you are craving chocolate, these are a perfect solution!
I mix unsweetened cocoa powder and special dark cocoa powder because I like the depth of chocolate flavor. But you can just use 1/2 c of unsweetened cocoa powder if that’s what you have on hand. They will be a little less dark, but that’s okay. They will definitely still be delicious! Also, I add chocolate chips, which is why I call them “triple chocolate”. You can also add peanut butter chips in place of the chocolate chips if you are a chocolate and peanut butter fan.
You’ll need:
- 1 1/4 c all-purpose flour
- 1/4 c unsweetened cocoa powder
- 1/4 c special dark cocoa powder
- 1/2 t baking powder
- 1/2 t baking soda
- 1/2 t salt
- 2 eggs
- 4 T unsalted butter, melted
- 1/2 c dark brown sugar
- 3/4 c milk
- 1 T vegetable oil
- 2 t vanilla extract
- 1 c chocolate chips
Preheat oven to 350. Spray muffin tins with non stick cooking spray. First, whisk together the flour, cocoa, baking powder, baking soda and salt in a medium bowl. In another bowl, lightly whisk eggs, then whisk in butter, brown sugar, milk, oil and vanilla. Quickly fold the wet ingredients into the dry with a spatula. Then just before the batter comes together, fold in the chocolate chips. Don’t overmix.
Divide the batter into the muffin tin and bake for about 25 minutes.
Finally, dive into these decadent muffins and enjoy! They keep for a few days in an airtight container – if they last that long.
