Whipped ricotta on grilled bread is a terrific appetizer. Add some thyme or rosemary infused olive oil and a drizzle of honey and it is a perfect addition to a meal as well.
I had an appetizer at the beach a couple of years ago that I couldn’t stop thinking about. It was whipped feta with grilled pita. It was fantastic. So I decided to try it with whipped ricotta. What does good bread and cheese need? Olive oil, of course. Then I decided to infuse the olive oil for even more flavor. I added a drizzle of honey for the sweetness factor.
This really isn’t a recipe per se. It’s more of an idea that you can run with and make it your own. You could use any flavored olive oil. Or, you can infuse your olive oil with any combination of herbs that you like. Also, you could leave off the honey if you don’t want the hint of sweetness. But this makes a great appetizer or addition to a meal!
First of all, you need to start with good bread. I usually get a Tuscan bread. It can basically be any French or Italian bread. It just needs to have some substance so that you can “grill” it.
Next, decide if you would like to flavor your olive oil. I typically infuse mine with thyme and rosemary. All you need to do is bring 1/4 c olive oil to a low simmer and add whatever herbs you want. Let it simmer for 2-3 minutes. You can then strain it or just leave the herbs in and serve it as is. I usually leave the herbs in there.
I use my grill pan to grill the bread. But if you don’t have a grill pan, you can put the bread under your broiler and get it nice and toasty that way. Or, you could for sure grill this on your outdoor grill!
For the ricotta, you simply whip a 15 oz container of ricotta cheese with an electric mixer for 2-3 minutes. It gets light and airy and wonderful. I have seen recipes that add some things to it, but I don’t.
Now just spread ricotta on the grilled bread and drizzle with the infused olive oil and a drizzle of honey. I know this sounds so simple, but trust me, it is so good.
Whip ricotta with hand mixer for 2-3 minutes or until light and fluffy. Heat olive oil in small saucepan to a low simmer. Add herbs and simmer for 2-3 minutes in the oil. Strain the oil if you want (I left the herbs in the oil) Slice the bread, then grill or broil it until crispy. Serve bread with cheese, oil and honey.Whipped Ricotta on Grilled Bread
