My favorite southern style skillet corn reminds me of my childhood. It goes perfectly with some southern fried chicken or any meat you happen to throw on the grill.
When I was growing up, summer was full of potlucks with family and friends. My aunt and uncle had a very large vegetable garden. So naturally, every event they attended, they would bring tons of fresh vegetables. They brought beautiful red sliced tomatoes, fresh green beans, okra and more. But my favorite was definitely the fresh corn. Sometimes it would just be corn on the cob, which is delicious. But most of the time, they would bring what they called “fried corn”.
This is my take on that dish and I absolutely love it. You can certainly use fresh corn for this recipe. But you can also use frozen corn. If you use frozen, try to find the mix of white and yellow corn. There’s not really a difference between the white and yellow kernels, but it just looks pretty in my opinion to have both.
You should definitely try this to take to a summer potluck or picnic! Everyone will love it.
Here’s what you’ll need:
- 3 cups of corn kernels (cut from the cob or frozen)
- 1/2 t salt
- 1/4 t black pepper
- 1 T sugar
- 1/4 c butter
- 1/2 c water
- 1 T flour
- 1/4 c milk
First, combine the corn, salt, pepper, sugar, butter and water in a skillet. Then turn the heat to medium and bring to a simmer. Now cover and simmer for about 15 minutes.
Then in a small bowl, combine the flour and milk and whisk it together, blending it until smooth.
The last step is to pour the milk and flour mixture into the corn and cook for about five more minutes, stirring constantly until it thickens up. Last but not least, garnish with some fresh chopped parsley. You are going to have the most buttery, creamy corn.
