I am all about Taco Tuesday – or really tacos any day of the week. So I’ve rounded up some of my favorite Taco Tuesday recipes for you!
Fish tacos. Over the past few years, fish tacos have become my favorite. I worked on my recipe for quite awhile and had a lot of “fails”, but I really love what I finally came up with. Made with Mahi Mahi and just a few seasonings, this is so easy to prepare and takes no time at all. The honey lime slaw is the perfect topping too!

These crockpot carnitas from Pinch of Yum are wonderful! Check this page out for tons of amazing recipes in addition to this one. Seriously, just put this together in the crockpot and cook for about 8 hours. Then you shred the meat and stick it under the broiler to crisp it up. It makes incredible tacos. I serve this with avocado, red onion and cilantro, but you can pick your toppings. This meat also makes for great nachos. *Note: I omit the cinnamon from this recipe.
Mexican Street Tacos from Damn Delicious. Marinated skirt steak (I’ve also used flank steak for these and it works nicely too. The flavor of this marinade is so delicious. If you want to make these, just factor in that the meat needs to marinade for at least an hour – or up to four. I make these often because they are just amazing and I crave them.
Slow Cooker Shredded Mexican Chicken from Carlsbad Cravings. Here’s another crockpot recipe that will not disappoint. This chicken just has such incredible flavor. I love the convenience of throwing it all in the crockpot and then just shredding it later and throwing it into tortillas.
Finally, if ground beef tacos are your jam, then try my homemade taco seasoning recipe! I try to keep a small jar of this in my spice cabinet at all times. You can also use this to rub onto chicken before grilling or you can sprinkle it sour cream to make a yummy southwestern dip!
