Blueberry Crisp – Perfect for Summer!

Blueberry crisp is a perfect summer dessert! Top it with some ice cream or whipped cream for a wonderful treat.

Did you know that blueberries are a “super food”? They are full of antioxidants and they are good for heart health and cholesterol! The best way to eat them is, of course, just all by themselves. But, if you are craving a blueberry dessert, this one is just amazing.

Oats, pecans, brown sugar, butter and cinnamon make a perfect, crumbly topping with just the right amount of crunch and texture.

I like cobblers or pies, but I tend to prefer a good “crisp”. I make apple crisp a lot in the fall and it is one of my very favorite fall things. So it made sense to make a crisp with blueberries and I am glad I did.

You’ll need:

  • 4 cups blueberries, rinsed and dried (may also use frozen)
  • 1 T cornstarch
  • 1/4 c sugar
  • pinch of salt
  • 1/2 c all purpose flour
  • 1/2 c quick oats
  • 1/2 c light brown sugar
  • 1/4 t cinnamon
  • 3/4 c chopped pecans
  • 1/2 stick room temperature butter, cubed
  • whipped cream or ice cream for topping

First, preheat your oven to 375 degrees.

Next, toss the blueberries in the 1/4 c sugar, cornstarch and salt until they are coated. This will just help thicken everything up so that you don’t have an overly runny situation.

In a separate bowl, combine the flour, oats, sugars, cinnamon, pecans and butter. Mix until it looks crumbly.

Now add the blueberries to a 2 qt baking dish, then top evenly with the crumbly topping.

Bake for 40 minutes. Let cool slightly (about 10-15 minutes) before topping it with whipped cream or ice cream if you want.

You can prep this in advance and store in the fridge and pop it into the oven when you start dinner. It will make your house smell amazing and then your dessert will be ready when you are!

Instructions
