Classic Italian Sub Sandwich

Sometimes you just need a classic Italian sub sandwich. Make your own and break the lunchtime boredom!

This sandwich is perfect for a picnic or a beach day because you use a good sturdy bread that won’t get soggy too fast. Wrap it in wax paper or butcher paper to make it last even longer. Whether you call it a sub, a grinder, or a hoagie, (depending on where you are from) this is a delicious sandwich full of veggies, Italian meats, cheese and tangy dressing.

Here’s how I make mine:

  • Start with good Italian bread (make sure it is sturdy)
  • Italian dressing
  • Balsamic vinegar
  • Provolone cheese
  • Rosemary Ham
  • Peppered Salami
  • Soppressata (or Mortadella)
  • Tomatoes
  • Thin slices of red onion
  • Banana peppers
  • Arugula (can substitute any other green you prefer)
  • salt and pepper

I usually buy a long loaf of Italian bread and then cut it to make a few smaller sandwiches. First, use a good serrated knife to cut the bread in half lengthwise.

Next, drizzle some Italian dressing and balsamic vinegar on both sides of the bread. You could also just use olive oil and vinegar, but the dressing just gives quite a bit more flavor.

Now, simply layer everything onto the bread. Don’t be afraid to pile up as many things as you like. You can make it veggie heavy or meat heavy. I start with the cheese, then meat and finally, veggies on top. Make sure you sprinkle some salt and pepper on top of it all before you add the top layer of bread.

Wrap the sandwich in wax or butcher paper, and then cut it in half or fourths. All the flavors will meld together and become crazy delicious. These will keep for a few hours before they start to get soggy.

Some other delicious things you could add are black olives, jalapeno slices, shredded carrots and whatever else sounds good to you.

Giardiniera is also perfect. It’s an Italian relish made with lots of pickled vegetables. You can find it in your grocery store where pickles and olives are.
