This make ahead breakfast casserole is perfect for feeding a crowd! Put it together the night before and stick it in the oven whenever! It’s also a perfect meal prep item that you can have all week long.
For my family, this casserole is associated with Christmas morning. I started making it several years ago because I wanted something I could make ahead of time. So I put it together at some point on Christmas eve and put it in the fridge. I stick it in the oven while we are all having coffee and starting to open presents and then it’s ready whenever anyone wants to grab a square.
The beauty is, that besides being delicious, it feeds my big family. If there are leftovers, they reheat so nicely. Also, this would be a great meal prep item and you can eat it for several days. You don’t have to limit it to breakfast. It could be a great lunch or dinner as well.
Here’s what you’ll need:
- 24 oz breakfast sausage, cooked and crumbled (you could also use Italian sausage)
- 8 slices bacon, cooked and crumbled
- 15 eggs
- 1 c sour cream
- 3/4 c milk
- 2 c shredded cheddar cheese
- 1 small can diced green chiles
- 1/2 green and 1/2 red bell pepper, diced
- 1/4 c sliced green onions
- 1 1/2 t salt
- 1 t pepper
- 1 t garlic powder
If you are making it right away, preheat your oven to 325.
Cook the bacon and sausage and drain on paper towels. Next, dice the peppers and onions.
In a large mixing bowl, whisk together the eggs, milk, sour cream and seasonings until fully blended.
Stir in the peppers and onions, then the meats and cheese. Make sure you give the sausage and bacon time to cool before you add it in.
Lightly spray a 9×13 pan with non stick spray. Pour your mixture into the sprayed pan.
At this point, you can cover with plastic wrap or foil and store in the fridge until you are ready to bake.
Bake for 55-60 minutes at 325.
You could serve this with hash browns or any kind of toast – bagels, english muffins, multi grain bread – whatever you like! If you are serving this for lunch or dinner, just add a salad!
