My Favorite Homemade Queso Dip

This homemade queso dip tastes like it came from a restaurant – maybe even better! Make this to go with your next Taco Tuesday meal!

Who doesn’t love a good queso with chips? I’ve tried so many recipes for this over the years, but this is by far my favorite. It actually really tastes like what you get at a restaurant. It has become a staple at my house every time we have Mexican food of any kind.

You need white American cheese for this recipe. You can get it at the deli section of your grocery store. I always ask them to slice it as thick as possible and then I just cube it when I’m ready to make the dip.

I use two chopped jalapenos, seeds and all. If you want less heat, maybe just use one and you can take the seeds out if you want.

Here’s what you’ll need:

  • 1.25 lb white American cheese, cubed
  • 1 small can chopped or diced green chiles
  • 2 jalapenos, chopped with seeds
  • 1/2 c cold water
  • 2/3 c milk
  • 1/8 t cumin

First, dice up all the cheese. You want them to be about the size of cheese cubes you buy at the store. This just makes it easier for them to melt down. Put it in a microwave safe bowl.

Add the chiles, jalapenos, milk, water (make sure it’s cold), and cumin. Give it all a quick stir and microwave for 2 minutes at a time. Stir between each microwave time. It will take a few of these (depending on the strength of your microwave) to get the cheese fully melted. Just keep microwaving and stirring until you have a delicious creamy dip. It usually takes my microwave four or five two minute cooking times to get to the right consistency.

If it seems too thick, just add a little more water.

Also, if you are going to have this out for awhile for a party, you may have to microwave it a little more at some point. It will start to thicken back up after awhile.

There are so many ways to serve this dip. Just all by itself with tortilla chips, obviously. But you can drizzle it on Mexican rice, tacos, burritos, etc. Really just anything you want some cheese “sauce” on. So delicious!

Ingredients
