This creamy crockpot corn, bacon and jalapeno dip is perfect for a super bowl party or any other gathering! Throw everything in the crockpot and enjoy when you are ready!
I am always on the lookout for easy party foods because I entertain a lot. Plus, I just love appetizers. This dip is easy and it is so good! I highly recommend using “scoops” chips. Trust me, you are going to want to get as much as possible in every bite.
You’ll need:
- 3 oz canned whole kernel corn, drained (can also use frozen)
- 2 jalapenos, diced
- 8 oz cream cheese, softened
- 1/2 c sour cream
- 4 slices cooked bacon, crumbled
- 1/4 c grated parmesan cheese
- 1 c shredded Mexican cheese
- 2 T chopped scallions or chives
- salt and pepper to taste
Cook and drain the bacon. Crumble it and set is aside.
Add all the other ingredients to the crockpot except the cream cheese. Once you’ve added everything else, cube the cream cheese and put it on top of everything. If you’d like to make it a little spicier, feel free to add more jalapenos.
Cook on low about 2 hours. Stir everything together and then cook on high for about another hour. Be sure to taste it to make sure you’ve added the right amount of salt and pepper. Never forget to season!
Serve with “scoops” tortilla chips.
