Buffalo chicken stuffed bread – because why not? This makes a perfect super bowl or any other kind of party dish.
This recipe combines two delicious things – buffalo chicken dip, and french bread. Buffalo chicken dip is fantastic with tortilla chips, but sometimes I also serve small pieces of bread to dip in it. So, I thought why not just stuff the dip into some bread? I really like the result.
Here’s the recipe for my buffalo chicken dip:
- 8 oz cream cheese, softened
- 1 small bottle Frank’s hot sauce (you can use the regular hot sauce or the wing sauce)
- 2 scallions
- 1 c shredded Mexican cheese
- 1 pkg dry Ranch salad dressing mix
- 2 cups cooked, shredded chicken (could use rotisserie chicken)
- 1 large wide loaf french or Italian bread
- Scallions or chives for garnishing
Make sure the cream cheese is very soft before you get started. Mix the cream cheese and hot sauce together with a spoon until it is as smooth as possible. Add all the other ingredients, making sure to mix until it is pretty smooth.
Cut the bread in half, lengthwise. Scoop out the bread to make basically a bowl. Be careful not to scoop out so much that you break the bottom of the bread. You need to have enough left on the bottom for the dip to cook in without leaking out the bottom.
Carefully spread dip into the bread and smooth it out making sure it goes to the top of the bread.
Bake at 350 on a large cooking sheet for about 30 minutes or until the dip is bubbly. Let sit for about 10 minutes, then slice and enjoy!
