Delicious crockpot taco soup is packed with so many good flavors and is easy to throw together. Serve with cheese, sour cream, avocado, etc.
Here’s a great cold weather alternative for taco Tuesday. This soup is one of my very favorites. I love how you can customize it with toppings. Some of my favorites are fresh cilantro, cheddar cheese and sour cream. I always serve this soup with Fritos scoops as well. You are going to want every drop of this soup and scoops can help with that.
Here’s what you need:
- 1 lb ground beef
- 1/2 medium onion, chopped
- 1 jalapeno, chopped (seeds and all)
- 2 cloves garlic, minced
- 1 pkg taco seasoning
- 1 pkg Ranch dressing mix
- 8 oz can tomato sauce
- 1 can rotel
- can of whole kernel corn
- can of black beans, rinsed
- can of pinto beans, rinsed
- 14 oz can beef broth
The first step is to chop the onion and jalapeno. Cook the ground beef in a skillet with the onions, jalapeno and garlic until no longer pink. Drain excess fat and add the taco seasoning packet and 2/3 c water. Simmer for about 10 minutes. Put the meat mixture into the crockpot. Add all the other ingredients and stir to mix everything together.
Turn the crockpot to low and just let cook as long as you need it to! Dinner is done.
You can also easily make this in a dutch oven by just cooking the meat, drain it and add everything else and simmer until you are ready to serve.

It also freezes well. You can actually freeze it in a large freezer safe ziploc bag. When you are ready to eat it, just let it thaw, then reheat on the stovetop or even in the microwave.
