Green beans sauteed with garlic are a simple, healthy side dish that will elevate any meal. Not only are they delicious, but they are beautiful as well!
This is seriously one of the easiest side dishes ever. It can also be very versatile. You can add a splash of balsamic vinegar at the end to make them Italian. Or you can add a little ginger and a splash of sesame oil at the end to give them an Asian flare. They taste fresh and delicious and look like a side dish you would get at a nice restaurant.
You’ll want to trim the ends of the beans before you get started. I like to leave them whole for this because I feel like they look more elegant. I just line up a few beans at a time and cut off all the edges at once.
You’ll need:
- 8 oz fresh green beans, ends trimmed off (see above)
- 1 t salt
- 1 T olive oil
- 2 cloves garlic, minced
- 1/8 t salt
- pinch of black pepper
The first step is to blanch the beans. Bring a large sauce pan of water to a boil with a teaspoon of salt. Make sure the water is at a rolling boil before you add the beans. Boil for 4 minutes. Drain and rinse with cool water.
Next, add the olive oil to a large skillet on medium high heat. Add the green beans and garlic and sautee for 2-3 minutes or until the garlic is golden and crispy. Remove from heat and add salt and pepper and toss. This would be the point to add a splash of balsamic vinegar or a little grated ginger and a splash of sesame oil to the beans as well. Another great thing to add is some shaved parmesan cheese.
