This key lime bundt cake is the perfect amount of citrus with a sweet glaze. It’s a perfect dessert for a spring or summer gathering. You could definitely make it for St. Patrick’s Day as well!
If you enjoy citrusy desserts, you are going to love this cake. It’s not difficult to put together, beautiful to look at, and so tasty. I like to take this dessert to picnics. It just feels like the epitome of a summer dessert.
Key lime juice can be found in the same section as the lemon and regular lime juice in your grocery store. You can use regular lime juice if you prefer. Key lime juice is a little more tart and just gives the cake a more distinct lime flavor.
You’ll need:
For the cake
- 3/4 c butter, softened
- 1 3/4 granulated sugar
- 3 large eggs
- 1/4 c key lime juice
- 2 T lime zest
- 3 c all purpose flour
- 1 t baking soda
- 1 1/2 c buttermilk
For the glaze
- 2 1/2 c powdered sugar
- 3 T key lime juice
- 1 T milk
Preheat oven to 350. Spray a bundt cake pan with non stick spray.
Beat the butter, sugar, and lime zest with a stand or hand mixer until creamy. Beat in the eggs one at a time and then add lime juice until everything is combined.
In a separate bowl, whisk together the flour and baking soda. Gradually add the flour mixture to the butter mixture, alternating with the buttermilk until everything is added.
Pour the batter into the prepared bundt cake pan and spread it out to make it even.
Bake for 50-60 minutes or until a toothpick inserted comes out clean. Let cool in the pan for 10 minutes, then flip out onto a baking rack to cool completely.
For the glaze, whisk together the powdered sugar, lime juice and milk until there are no lumps and it’s completely smooth. Pour over the cooled cake, then top with more lime zest.
