Battered and fried tortellini? Why not? These insanely delicious tortellini bites will always be a hit. Try them out at your next party!
I love a good appetizer. A party with nothing but apps is so alright with me. I’m constantly trying to look for new recipes or make up my own that can be a “party food”. I also love pasta, specifically tortellini, so this seemed like a good plan. It was.
You will need to get the tortellini that’s in the fresh section of the store, not the frozen. It’s usually near the cheese section. You could also do this same recipe with ravioli.
Here’s what you’ll need:
- 1 9oz pkg tortellini (refrigerated section, not frozen)
- 1 c panko bread crumbs
- 2 eggs, beaten
- 1/4 c shredded parmesan
- 1/2 c all purpose flour
- 1/2 c vegetable oil
- marinara sauce for dipping
Cook the tortellini according to the package instructions in a large pot of boiling salted water. Drain well.
Using three pie pans or shallow bowls, set up the eggs in one, the flour in one, and the panko and parmesan combined in one.
Dredge the tortellini in the flour, then the egg, then the breadcrumb mixture. Make sure you press the breadcrumb mixture onto the tortellini to fully coat them.
Heat the vegetable oil in a large skillet over medium high heat.
Add tortellini to the oil (8-10 at a time) and cook until evenly golden brown and crispy on all sides. This should only take 1-2 minutes. Drain on a paper towel or even better, a brown paper bag.
Garnish with extra parmesan and serve immediately with marinara sauce for dipping. You can also garnish with some fresh parsley or basil if you’d like.
You will not be disappointed in these. They are crispy on the outside and just the right chewiness/cheesy/saltiness on the inside.
