This crockpot red beans and rice recipe might just become one of your favorites. It’s easy and so very flavorful. Just make some rice and dinner is done!
I really love a good crockpot recipe and this is one of my very favorites. You can put everything except the rice in the crockpot and just let it cook for 6-8 hours. It’s such an easy meal. Beware that this recipe makes a lot, so it’s a great option for feeding a crowd – or for lots of leftovers. It reheats really well.
You’ll need creole seasoning for this recipe. You can find it in the spice aisle of your grocery store. It’s a blend of paprika, salt and pepper, onion powder, garlic powder, oregano, basil, thyme, white pepper and cayenne. This dish does have some spice!!
You’ll need:
- 1 lb uncooked dried red kidney beans
- 4 cloves garlic, minced
- 4 celery stalks, sliced
- 1 onion, diced
- 12 oz Andouille sausage, sliced ( I used hot)
- 1 red bell pepper, diced
- 2 t Creole seasoning
- 1 t Louisiana hot sauce (if you don’t want extra spice, leave this out)
- 2 bay leaves
- 1/2 t dried thyme
- 7 cups chicken or vegetable broth
- salt and pepper to taste
- sliced green onions and brown or white rice for serving
Rinse the beans thoroughly under water. Drain.
Add everything except the rice and green onions to the crockpot. Cook on low for 6-8 hours or until beans are soft and completely cooked.
Serve over bowls of rice and top with green onions.
