Super easy no bake cheesecake squares are the perfect summer treat. Top them with whipped cream, fruit or even chocolate syrup!
Sometimes it’s just too hot to turn on the oven, but you want a yummy dessert. I have several “no bake” summer dessert recipes that I go to that are so delicious. This one is really so fast and easy and is always a hit. I have topped them with blueberries, strawberries, raspberries, whipped cream and chocolate syrup. They are also great with no toppings at all.
For the crust:
- 15 graham crackers
- 7 T butter, melted
- 1/4 t salt
- 1 T brown sugar
For the filing:
- 16 oz cream cheese, softened
- 1 c heavy cream
- 2 t vanilla extract
- 2/3 c powdered sugar
Process the graham crackers in blender or food processor until they are fine crumbs. Add the graham cracker crumbs, salt, melted butter and brown sugar to a large bowl and mix to combine.
Line a 8×8 or 9×9 pan with a piece of parchment paper, leaving some to hang over the edges. This makes it super easy to just lift the cheesecake squares right out of the pan when you are ready to cut them. Press the crust into the bottom of the pan, using your hands to firmly press them in.
Using a hand mixer (or Kitchenaid), beat the cream cheese until it’s fluffy – 2 or 3 minutes. Add the powdered sugar and vanilla and mix until combined.
In a separate bowl, beat the heavy cream until stiff peaks form.
Fold the whipped cream into the cream cheese mixture until thoroughly combined.
Pour the filling into the prepared crust and smooth it all out.
Cover and refrigerate the squares for at least 6 hours. These will stay good in the refrigerator for several days. You can definitely make them in advance.
Add whatever toppings you’d like right before serving. Or, you could set out a variety of toppings and let your family or guests choose what topping/toppings they want!
