These blonde brownies are the BEST. They are chewy and chocolatey and some kind of wonderful. They are great warm and they are great two days later if they last that long. This is definitely one of my “go to” recipes when I’m having guests, or family night, or when I just need something sweet. They’re also very easy to make and I almost always have the ingredients on hand. You should definitely make these!
Here’s what you need: 2 sticks of butter, softened (sorry, not going for healthy today), 2 c brown sugar, 2 c all-purpose flour, 2 eggs, 1/2 t baking powder, 1/4 t baking soda, 1/8 t salt, 1 c chocolate chips.

Start by beating the butter and brown sugar together.

Next. add the eggs and vanilla and beat until smooth. I measure out my flour and add the baking soda, baking powder and salt to the flour, but you can add all these things separately if you want. When I add the flour, I mix it up with a spatula instead of using the mixer from this point on, but again, do it however you want.

Once you have it mixed well, here’s where you can be creative and make these your own. I usually just add chocolate chips, but I have added walnuts, pecans, butterscotch chips, peanut butter chips, Heath toffee chips, etc. I haven’t added all of these at once, but now that I’m thinking about it, I just might. Today, though, I am only adding chocolate chips.

The batter will be very thick. That’s how it’s supposed to be. Lightly grease a pan. You can use a 9 x 13 if you’re okay with them being really thin. I tend to use a smaller pan and have them be thicker – this is totally up to you. You will have to spoon the dough into the pan and spread it out with a spatula.

Bake at 350 for about 20 minutes if you are using a 9 x 13 pan and 30-35 if you are using a smaller pan. You are just looking for them to be golden brown. If they seem a little soft in the middle after my suggested times, it’s okay. They will finish cooking a bit after you take them out of the oven.
I do suggest not cutting them immediately, but if you want to dig in while they are still warm, please do. Maybe just let them cool for at least 10 minutes for best results.
If you want to make this fancy, add a scoop of vanilla ice cream on top and a drizzle of chocolate or butterscotch sauce!
