It seems like one pan meals are very popular right now. I get it. You can throw everything on one pan, stick it in the oven, and dinner is done! So I decided to do my take on a one pan meal. This meal is easy to make, looks pretty and is nutritious! Another great thing is that you can do your own variations on this for sure. If you want to change which veggies you use or which seasonings you use, that’s great! But you should try this combination I used because it was delicious!
The only thing that takes a little time for this dish is chopping all the veggies. Here are the veggies I used today.
Just chop all your veggies up, but keep in mind that carrots and potatoes, for example, will take longer to cook than zucchini or peppers. So, cut the ones that take longer into smaller pieces and leave the others in bigger or thicker pieces.
Next, I cut up some Italian sausage into pieces like this.
I put all the veggies onto a large cookie sheet that I lightly sprayed with no stick spray. Then I just tossed all the sausage pieces onto the top.
Next, I added the following to a small bowl: About 4T of extra virgin olive oil, 1/4 t crushed red pepper flakes, 1/2 T of basil, parsley, garlic powder and oregano, and 1/2 t thyme and onion powder. I whisked it all together and then poured it on top of the veggies and meat and gave them a little stir. I sprinkled a little salt and pepper on top as well.
Preheat the oven to 400. Stick them in the oven for about 15 minutes, take them out and stir them around a little more and roast for another 15 minutes or until the veggies feel tender when pierced with a fork.
The olive oil and seasonings as well as the juices from the sausage give this dish a TON of flavor. When I took it out of the oven, I sprinkled about 1/3 c of parmesan cheese on top. You can serve this with rice or pasta if you want, but it is a delicious meal all by itself!
