You guys, I’ve been reading about all the amazing things you can freeze in ice cube trays, and I just need to share it with you. I’ve been freezing pesto in them for years and just last year, I discovered that you can freeze fresh herbs with a bit of olive oil. As if those two uses were not awesome, I’ve been seeing a ton more things you can freeze. I’m about to go buy all the ice cube trays. All of them.
Just look at this list of things you can freeze!
Homemade stock – Genius! Make stock, use what you need, freeze the rest and pop out only as much as you need for sauces or to reheat leftovers.
Smoothie ingredients – Pop out how many you want and let them thaw while you drive to work or wherever and enjoy your smoothie.
Coffee – Coffee ice cubes to go into your iced coffee so as not to water it down, but to give you more coffee flavor. Brilliant!
Fresh squeezed lemon juice – If you have a recipe that calls for “the juice of half a lemon”, freeze the rest and use a lemon juice ice cube to flavor your water – or iced tea!
Wine – you can freeze it to use for recipes that call for a small amount of wine or to make sangria.
Caramelized onions – This is so exciting to me. You can make a large batch and freeze them for burgers or whatever recipe you need them for.
Egg whites or yolks – when you have a recipe that calls for 5 egg whites? You can freeze the yolks and use them later!!!! This is very good news.
Cookie dough – so that you can just make a couple of cookies (who does that?) or just to pop out and eat!
Fresh Ginger – this is really good news to me as well. Peel it, grate it, then freeze it for later recipes. Such a time saver.
Pesto. See my pesto recipe here You can make this and freeze it and just use enough for two servings of pasta or twelve – whatever you need!
Last but not least, as I mentioned earlier, put some fresh herbs into trays with some olive oil and enjoy the taste of fresh herbs all year round!
Go out and buy yourself some ice cube trays and get to freezing!
