This spiced coffee cake reminds me of fall and all of its wonderfulness. I truly enjoy all of the seasons. I really do! I love each one of them for different reasons. But, fall is probably at the top for me. So even though it’s still summer and I am still in beach mode, I give you this lovely preview of fall.
You’ll need: All purpose flour, 3/4 t cinnamon, 1/2 t nutmeg, 1/2 t baking soda, 1/2 t salt, 1/2 c butter, softened, 3/4 c dark brown sugar, 2/3 c sugar, 2 eggs, 1 t vanilla, 1 c buttermilk. And for the topping: 1/2 c pecans, 1/3 c dark brown sugar, 1/4 t cinnamon, 2 T butter, melted, powdered sugar, and milk.
Combine the first five ingredients and whisk them together. Did you know that whisking basically does the same thing as sifting?
In a separate bowl, beat the softened butter and sugars at medium speed until combined.
So, now you have your dry ingredients and your butter/sugar mixture. Measure out your one cup of buttermilk and add a little of the flour mixture and a little of the buttermilk to the butter alternately, beating at low speed after each addition.
The batter will look like this
Pour into a lightly greased 9 inch square pan.
Make your streusel topping. Chop the pecans and mix them with the brown sugar, flour and cinnamon. Pour the melted butter over the top and mix it up. It will be sort of crumbly, which is what you want. Crumble it on top of the cake batter.
Bake at 350 for 35-40 minutes or until a toothpick inserted comes out clean. Your house is going to smell like fall and Christmas while this is baking.
It will come out looking like this. But wait, we’re not done yet. Make a glaze by mixing powdered sugar and milk – and pour it all over the top of the cake once it is cooled. This is an optional step, but I highly recommend it!
This cake is great for breakfast or literally any other time of day. It is one of my absolute favorites, and I hope you will make it!
