Crazy Chocolate Cake

Crazy Chocolate Cake – how’s that for a name?  Another name for this cake is depression cake.  I found this recipe on Pinterest while searching for desserts with no dairy because I have some family members who can’t have it.  The interesting process for making this cake really intrigued me, so I thought I would give it a try on blog cooking day.  It turned out great!  My family loved it and I will definitely make this again!

Here’s what you need:  1 1/2 c all purpose flour, 3 T cocoa, 1 c sugar, 1 t baking soda, 1/2 t salt, 1 t white vinegar, 1 t vanilla extract, 5 T vegetable oil, and 1 c water.  

Mix the first five ingredients straight in a greased 8 inch square pan.  Yes.  In the pan – you don’t even need a mixing bowl for this cake!

 

 

 

 

 

 

Make three wells in the mix – two small and one larger.  I have no idea why this is the process, but I did it and it worked.

Add the vinegar in one of the small wells, the vanilla extract in the other small, and the oil in the larger one.

 

 

 

 

 

 

It should look like this, which in my opinion, is a surprised face.

 

 

 

 

 

 

Now pour the water over the top of all of it and mix well.

 

 

 

 

 

 

 

 

 

 

 

 

Preheat your oven to 350 and bake on the middle rack for about 35 minutes.  

I have to confess that I tried a non-dairy frosting to go on this that did not turn out well at all.  So, I’m going to keep searching for a recipe that I like for that, but in the meantime, I just sprinkled some confectioner’s sugar on top and I’m telling you, it was crazy good.

Ingredients

  • 1 c sugar
  • 1 t baking soda
